Recipe: Amy’s Chicken Salad

Everyone seems to have their version of chicken salad or the one person in their family that makes it for every event. It’s typically tiny bits of chicken slathered, no, doused in mayo with halved grapes, put on white bread or whole grain. I have never been a fan. Every event someone says well you haven’t tried this one. Well I am hear to tell you, this one is going to make you forget all the bad chicken salads you have had – ever. Amy made this chicken salad nay-sayer a believer.

Ingredients

  • 2 Cans of Chicken (10 oz each) drained 
  • ½ to 1 C Mayonnaise (start with ½ C)
  • ½ C Green Onion
  • 8oz of Mandrin oranges – drained
  • ½ C Sliced Almonds
  • ¼ t Garlic Powder
  • ½ t Onion Powder
  • 1 ½ t Dried Minced Onion
  • Salt & Black Pepper to Taste
  • A dozen mini croissants

Then mix all the ingredients together (besides the croissants, obviously). Adjust the salt, pepper and mayo to taste. Slice the croissants and scoop the filling into each one. Layer tomatoes or romaine in the croissant to add a lil extra something.

If you are have leftovers, we recommend keeping the filling separate from the croissants.
