Who doesn’t love a fresh warm banana bread muffin! Yum! Also how many times do you not eat those last few bananas before they pass your standard of eating. So either whip up some muffins before you toss those brusied bananas in the garbage or peel them and put them in the freezer and make some muffins on a rainy Saturday afternoon.

Banana Bread Muffins
Your new go to banana bread and banana muffin recipe! The key? Your type of flour!Note: This recipe makes one loaf of banana bread and 12 muffins
Ingredients
- 3 Ripe Bananas
- 1/2 cup Butter melted
- 1 1/8 cups Sugar
- 2 Eggs
- 2 tbsp Buttermilk
- 1/2 tsp Vanilla Extract
- 2 cups Cake Flour
- 1 tsp Baking Soda
- 1/2 tsp Baking Powder
- 1/2 tsp Salt
Instructions
- Preheat your oven to 350 degrees. Grease a loaf pan and prep your muffin tin with paper liners.
- In a large bowl mash your bananas. You can use a hand mixer for this recipe.
- Add the butter, sugar, eggs and mix.
- Add the buttermilk and vanilla and mix.
- Then add your dry ingredients, flour, baking soda, baking powder and salt and mix, leave slightly lumpy.
- Fill your muffins liners 3/4 of the way, you should have 12 muffins. Pour the rest of your batter in your loaf pan.
- Place both the muffin tin and load pan in the oven for 10-12 minutes. Rotating your pans halfway through helps them cook evenly.
- They are done when the tops spring back after you touch them.
